M&M’s Cookie Bars


Hello, my friends.

There is a very interesting psychological phenomenon I would like to talk about today. It’s pretty serious, and I would say that it affects most everyone (especially college students). This non life-threatening (and temporary) condition is called The Sunday Sads. Familiar with this? The Sunday Sads is a time on Sunday afternoons or evenings when you start to feel kind of gloomy and cranky.”MY WEEKEND WAS SO AWESOME,” you think to yourself. “PLEASE DON’T MAKE ME RETURN TO THE REAL WORLD,” you plead with life. “I WOULD LIKE TO HUG MY MOM,” you shout to the universe. Typically, The Sunday Sads follow a pretty awesome weekend filled with good times and those you love.

This past weekend was just one of those weekends. I was able to spend the past three days with one of my bestest pals at her family’s lake house. We ate lots of yummy food, sipped on fun drinks, boated around the lake, listened to our girl Taylor Swift, went on many walks and talks, and ended each night snuggled up watching Gilmore Girls. Essentially, it was heaven. Due to the wonderfulness of the past few days and a busy busy week looming ahead, I am experiencing a close cousin of The Sundays Sads, The Monday Mopies. Are you too feeling this sensation?

If you are, there is really only one way to make this feeling go away. THE ONLY PRESCRIPTION IS MORE COWBELL. Just kidding. Cowbell may not be effective in bringing about warm fuzzies and banishing The Monday Mopies, however, these M&M’s Cookie Bars will sure do the trick! On Friday, I was poking around searching for something yummy and quick to take with me this weekend. When I saw this recipe on Averie Cooks, I just knew I had to give them a try! They are gooey and chocolatey, with a yummy blondie-like flavor. YOU WILL HAVE NO REGRETS.


M&M’s Cookie Bars

1/2 cup unsalted butter (melted)

1 egg

1 tablespoon vanilla extract

1 cup brown sugar

1 cup flour

1/2 teaspoon salt

1 cup M&M’s (I used Crispy)

3/4 cup semi-sweet chocolate chips

Preheat the oven t0 350F. Use aluminum foil to line an 8×8 pan. Spray with cooking spray.

Melt butter completely in a microwave safe bowl. Once melted, use a whisk to mix in egg,  vanilla extract, and brown sugar. Once combined, mix in flour and salt. Be careful to not overmix. Stop mixing once just combined.

Next, add in M&M’s and chocolate chips. I used Crispy M&M’s to add a little extra crunch, but feel free to substitute a different variety. I think mini M&M’s would be super cute!

Pour batter into prepared pan. Use a spatula to smooth the top. Press several more M&M’s and chocolate chips into the top of the bars before baking. This is optional, but helps to make the bars look that much more cheery and colorful!

Bake for 25-30 minutes. You will know that the bars are finished baking when a toothpick inserted into the middle comes out clean. Bars will firm up as they cool.


You will love how quickly this one-bowl, no-mixer recipe comes together! It is perfect for bake sales, birthdays, or when you are just in the need for a chocolatey treat! This would be a great recipe for kids or boyfriends to help with, as it is pretty foolproof.
